I have both an F650GS (the forerunner to the F700) and an F800GT and like both. The F650 gets used for running around locally on both the hardtop and fire roads as well as back and forth to work. I plan to use the F800GT as a replacement for my R1200RT to tour with. I think the difference is that the F700 is a road bike with some off road capabilities and the F800GT is a pure road bike. I was never interested in the F800GS because the wire wheels and tube type tires turn me off. They're a pita if you get a flat whereas the tubeless tire are pretty easy to fix.

I have no experience with the R but it should be a good road bike if you like naked bikes.

Slightly slower steering due to the 19" front wheel, but otherwise not a bad bike. I tend to stick to back roads, but I spent a week on my F650 Twin viewing the foliage in Vermont a couple years ago and the bike did just fine. You should be very happy with your decision.
